Caramelized Onions and Brie on Puff Pastry

Try this flavourful pastry as a tasty appetizer or a savoury snack. Light flaky pastry topped with sweet balsamic caramelized onions and melted Brie cheese—you can’t go wrong with this simple starter.

Ingredients

  • 2 Tbsp canola oil (30 mL)
  • 3 large white onions, thinly sliced
  • 2 Tbsp balsamic vinegar (30 mL)
  • 1/4 tsp salt (1 mL)
  • 1/2 tsp ground black pepper (2 mL)
  • 4 oz Brie cheese (125 g)
  • 1 – 10×10-inch (25x25cm) sheet puff pastry, thawed, measuring about
  • Sprigs of fresh thyme, for garnish

Directions

  1. In a large skillet, heat canola oil set over medium-high heat. Add onions and sauté for about 10 minutes, stirring frequently. Reduce heat to medium low, cover and continue to cook onions for another 30 minutes, stirring occasionally, or until onions are soft and light brown.
  2. Add vinegar to pan and continue to cook for another 10 minutes, stirring occasionally, or until vinegar has been absorbed. Season with salt and pepper.
  3. Meanwhile cut Brie into ½ inch (1 cm) thick wedges.
  4. Cut 16 equal sized squares from the sheet of puff pastry. Use a fork to prick the pastry. Bake at 400°F (200°C) for about 8 minutes or until squares are golden brown. Remove from oven and let cool.
  5. To Assemble: Place 1 Tbsp (15 mL) Balsamic Caramelized Onions on top of each Puff Pastry Square. Top with a slice of Brie and a sprig of fresh thyme; serve immediately.
